An Old Classic- Porchetta

I can still remember the first time Mr. T & I ever had a Porchetta Sandwich. It was a crisp October weekend filled with beer and football about 5 years ago.  It only took one bite of that fennel dusted, pork fat laden sandwich for Mr. T to become a serious addict. We ate a ton of sandwiches back then.  But over time we slowly forgot about the tiny little shop until last week when Mr. T strolled in the door with a bag just bursting with aromas of sage, thyme and rosemary.  Suddenly it all came flooding back to me...this is what we'd been missing.  That incredibly compact ciabatta roll lightly drizzled with olive oil then stuffed to the brim with shreds of tender oven roasted pork and fried pork cracklings.  This is one seriously intense sandwich that I am happy to welcome back into my life. Brunch at Porsena

I can still remember the very first time I had Porchetta...that rich delicious sandwich set off an all out  pork filled weekend .  I remember thinking that this Sara Jenkins lady really knew what she was doing bringing a sandwich like this to NYC.  Since then Porchetta has been consistently packed and Chef Jenkins has opened up a second restaurant just blocks away called Porsena, focusing on classic Italian dishes.   We began with a light Spinach Salad dressed with crumbled egg and warm bacon vinaigrette.  It was so simple and delicious I almost wished we hadn't decided to share. Mr. T moved on to a hearty Pasta Carbonara made with organic eggs and thick cubes of house made pancetta while I ordered the Porchetta burger (of course) made with beef & pork, porchetta seasoning and cheddar cheese. Holy Pork Fat Batman!

This weekend was all about two things- football and pork.   Actually I guess you could add beer in there as well since we seemed to have a lot of that also but the main events were the pork and games. We met up with some friends and started our night by grabbing some sandwiches at the revered Porchetta.   The tiny little shop on 7th street can barely hold more than 8 people, and it was already filled to capacity, so we decided to just grab some sandwiches to go and find a bar to eat.   We ended up at Arrow where they had a great 2 for 1 special going on which helped us start our night on a good foot. As soon as we got our beers we tore into the tinfoil and unwrapped one of the most succulent, fat laden sandwich's I have ever tasted. At first glance this sandwich seemed a little on the small side. Once I had my first bite I realized the intensity and fat in this sandwich was going to be enough to fill me beyond belief.   The pork was so tender there were liter...
