StarChefs Congress Day III

The StarChefs Congress closed out this year with a festive celebration entitled Bad Hombres y Mujeres.  Which was a really incredible array of some bad ass chefs cooking some of my favorite food in the world- tacos! 



Luis Acre Mota & Rigo Cervantes from LES spot La Contenta were grilling up some delicious octopus tacos alongside a gorgeous and refreshing hibiscus cocktail.


Top Chefs contender Katsuji Tanabe from Mexikosher on the Upper East Side was doling out some creamy Corn Esquites layered with cheese and paprika...

 

..while Chef Jake Rojas of Tallulah's Taqueria in Providence, Rhode Island cooked up my favorite dish of the day Tacos de Lengua con salsa fesca (Beef Tongue Tacos).


The meat in this taco was incredible.  So rich and tender; held together by a perfect corn tortilla and a douse of fresh lime juice with hot sauce.  I honestly haven't had a Beef Tongue dish of any sort in years and this was a fresh reminder to never shy away from such a flavorful meat.



Chef Erik Ramirez of the Llama Inn was on hand again this year with a vibrant Tuna Ceviche.  


Then is was onto something sweet from Chef Nico Abello of the hot new resturant L'Appart in the Financial District.  This tiny Rectte de Creme de Marrons incorporated the perfect amount of Brazilian espresso beans and thick eggy cream. 


Then it was onto the inaugural Wing Battle at StarChef where five different groups battled it out on the Main Stage in front of a panel of judges including David Burke, Bill Kim, Amy Smith (Executive Chef at Buffalo Wild Wings), Brad Orrison and Kikkoman's Tom Ikeda.  


I got a chance to try each of the wings and the competition was fierce.  I loved the saucy spiciness of the wing from George Azar of Flowers of Vietnam in Detroit but the best overall wing of the day was definitely from winner Curtis Gamble of Station in Pittsburgh.   His had both a crispy sweet exterior and a tender juicy inside that I absolutely loved.  It was such a fun, delicious way to close out another amazing Congress.
